1 1/2 lbs. chicken legs and/or thighs 1 can Cream of Chicken Soup 1 can Cream of Mushroom Soup 1 can Rotelle tomatoes (tomatoes with chili peppers) 8 flour tortillas 1 (2 cup) bag shredded cheddar cheese
Boil chicken, cool, and tear meat from the bones. Set meat aside. Combine soups and tomatoes in a saucepan and simmer until hot. In a glass lasagna pan, tear up the tortillas into 1 or 2 inch pieces, line the pan with them. Spread chicken meat over tortilla pieces. Pour soup mixture over that. Sprinkle cheese all over the top of all that and bake at 350 until cheese is melty and bubbly (about 20 minutes). If you like it spicier, you can add more chilis or jalapenos. Good Man Food.
